Recognized for its refined cuisine, awarded at the Michelin Guide by a star for its restaurant The Promenade, in Verfeil, near Toulouse, the young chief Nicholas Thomas had been forced to close, with death in the soul, his magnificent establishment in March 2022, after being placed in compulsory liquidation.

This talented cook was quick to bounce back away from Toulouse. It is on the Côte d’Azur that he has just found a base to exercise his talents, at the beginning of May 2022, at the restaurant La Flibuste, one star in the Michelin Guide.
An establishment located in the Marine Baie des Anges in Villeneuve-Loubet, near Nice (Alpes-Maritimes)which announced the arrival of Nicolas Thomas.
He took the reins in early May
He officially took over the restaurant kitchens on Friday, May 6, 2022.
“Coming from a demanding culture requiring great attention, he distils creative and sincere cuisine based on respect for the product and the quest for excellence”, announced La Flibuste to its customers.
An atypical career, “a dazzling progression”
His new “house” evokes in this same message “a dazzling progression for an atypical career; initially a professional cellist, he decided to change his life, to live his passion for gastronomy”.
Before earning his first star in 2018 and before opening La Promenade in Verfeil in 2013, Nicolas Thomas had officiated for several years with the Orchester de chambre de Toulouse and the Orchester national du Capitole before completely changing of track in 2010.
