The culmination of the complete overhaul of the Domaine de l’Hospitalet, the restaurant L’Art de vivre has just reopened its doors to offer refined gourmet cuisine. A jazz bar also completes the site. The estate is hosting the artist Robert Combas this summer, who has taken over the premises for a major exhibition.
It’s a meticulous puzzle that has been taking shape for several months and Gérard Bertrand has just added one of the last pieces to it. With the reopening of the restaurant L’Art de vivre, the winemaker has the setting he wanted for his top-of-the-range cuvées. A gastronomic table that offers a new experience in an extremely refined decor where the works of Robert Combas, this summer’s guest artist, stand out singularly.
Only 7 tables in shades of beige and off-white with a view of La Clape, its pebbles, its vines and its cypresses, to better highlight the beauty of the landscape. Chef Laurent Chabert, in the kitchen for 8 years, took advantage of the long forced confinement holidays to make and redo his ranges. He elaborated “a vertical kitchen”his way of making short work of earth and sky “in a holistic approach to sublimate the moment” assures Gérard Bertrand. “He thought and worked a lot to develop this very vegetal cuisine imbued with naturalness, both light and digestible, he knew how to free himself from traditional cuisine while keeping his know-how”, confides the winegrower who salutes the work done by the chef to pair with the wines and offer “the vibration in the mouth”. Three menus are offered: Inspiration in 4 courses (€69), Revelation in 5 (€99) and Elévation in 7 (€119)… The 7th heaven necessarily has a price!
A very high precision cuisine, centered on the product and the cooking, for which Laurent Chabert found his local producers and his organic vegetable garden, but also the picking of aromatic plants from the estate to be in perfect osmosis with this terroir sublimated by the menu. wines. Head sommelier Pierre-Alexis Mengual has just joined the team at the beginning of May. A few days later, he won the Ruinart Sommelier Challenge.
Now a wine resort in its own right, L’Hospitalet declines its range: a gourmet restaurant with L’Art de vivre, a traditional table with Chez Paule, a private beach in Narbonne-plage L’Hospitalet beach, a hotel at the Château , a spa and luxury suites at Villa Soleilla. It lacked a bar where you can sip cocktails while listening to music… It’s now done with the Jazz-bar, which pays tribute to the legends of jazz and the many artists who have performed on the festival stage since its creation. 18 years ago.
